Muffin Tin Monday



These aren't very good pictures, but this is our Muffin Tin for today. I wanted to try to sneak some veggies into the kids so I went to my Sneaky Chef cookbook and came up with these pizzas. You take 1/2 cup of tomato sauce (I had some leftover spaghetti sauce in the fridge- no meat), 1/4 cup of white bean puree, and 3 Tbsp of orange puree (in my case- sweet potato baby food) and mix them together. I heated them slightly. Then top an english muffin and top with cheese. Toast. The boys really liked them and didn't notice that they had extra veggies in them. We also had broccoli, harvest bread, apples, grapes, caramel sauce (love saving all the extra ones from McD's), and half of a yogurt. Enjoy!

I really need that book! My daughter Madelyn will not eat veggies. It's so frustrating because everyone in our house is a veggie lover. I'll have to try that recipe because she loves pizza:)

Great presentation - I never thought about adding veggie puree to pizza sauce, great idea! My oldest son is super picky, but I'm sure he wouldn't notice anything on his precious pizza!! :)

Stopping by from SITs. I keep seeing all these posts on muffin tin mondays. What a cute idea. I wish I would have thought of that when my girls were little.

We just plunked everything on their high chair trays. :)
